Black-eyed Pea Ideas?

So I’m looking at the fresh black-eyed peas in my refrigerator and thinking they might not keep so well… Much as I love to munch on them raw, I’d like to try to make something with them.  The recipes in the cookbooks I’ve consulted, though, don’t take advantage of these peas’ awesome freshness.  My ideas:

  • steam them and serve with chili sauce (An old boyfriend’s southern mother served them this way and they were great!  But her chili sauce was homemade, and I never got the recipe.)
  • mix them raw with some cooked bulghur, chopped tomato, lemon juice, olive oil, and basil for a different spin on tabouli
  • make a sort of cowboy caviar by mixing them with diced tomato, onion, cilantro, and lime juice, then serving with chips

What are you thinking of doing with them?
