Jacques-Inspired Pasta and a Key Lime Pie

Seeking supper last night, we turned to PBS cooking show host Jacques Pépin’s book, Fast Food My Way.  We tossed a can of tomatoes (sadly, we had no fresh ones) with a diced Local Box zucchini and a handful of diced Local Box mushrooms, drizzled with olive oil, sprinkled with salt and pepper, then cooked in the microwave oven for 2 minutes. We cooked a half-box of pasta spirals, then tossed the lot together with some grated Parmesan and shredded Local Box basil for a satisfying one-dish meal.

For dessert, I’d promised a Key Lime pie. I didn’t have quite enough Key Limes, but I substituted a regular Local Box lime and the results were excellent!  The results made a mighty fine breakfast, too. (Fruit, eggs, dairy… sounds like breakfast to me!)
