This is a super easy salad that comes together really quickly. I had it with some grilled chicken, but the bold flavors would complement fish or steak well too. It’s got some bite from the radish, but the cilantro and rice wine vinegar it out nicely.
- 1 bunch radishes, sliced thinly
- 1/2 c. cilantro, chopped
- 3 Tbsp. rice wine vinegar
- 1/4 tsp. kosher salt
- Freshly ground pepper, to taste
- Combine all ingredients and adjust ingredients to taste. Let sit for 30 minutes before serving.
